FIT4MOM Richland's Member of the Month - Nikoal Soggie

Meet the beautiful, inspiring and strong Nikoal! She is a member of FIT4MOM Richland and on her way to completing a 10k with our Running Club!

Favorite thing about FIT4MOM: I enjoy having a place to challenge myself and having a community of women who support each other in whatever they are trying to accomplish.

When did you join FIT4MOM? January 2016

What is your current job? Or what did you do before staying at home? Before I had kids I worked in retail, and after my daughter was born I began working for Pasco School District as a Special Education Paraeducator. Now I am lucky enough to stay home with my little guy and to volunteer weekly in my daughter's classroom.

What is your favorite food? Macaroni and cheese and Steak

What is your favorite beverage? Lemonade or D's Wicked Cider

What is your favorite book? I don't think I could pick a favorite book. But Patricia Briggs and Liane Moriarty are my favorite authors, and my favorite series is Harry Potter.

You are given four free hours of babysitting, what would you do? I would go out to dinner with my husband.

What is your dream kid free vacation? I would love to go to Ireland or Australia.

What is your dream family vacation? My daughter loves the ocean as much as I do, so I would love to take my family to Hawaii.

How has becoming a mother changed you? Now that I am a mom, I am more patient and am better at taking care of others even when I'm tired.

Fondest childhood memory? We lived in Germany and Italy when I was in elementary school and I loved exploring new cities and places with my family.

Your favorite "go to" family friendly recipe? My favorite recipe is chicken enchilada casserole. Here's the recipe:

Ingredients: 5 lb bag of frozen chicken, 1 large can enchilada sauce, 1 large bag shredded fiesta cheese, 1 bag small corn tortillas

•Cook chicken and sauce in a crock pot on low for 8-10 hrs. Remove chicken and shred it. I usually mix some of the sauce in the chicken to help it stay moist while assembling the casserole.

•Cover the bottom of a large baking dish with a thin layer of sauce, then put a layer of tortillas, a layer of chicken, a layer of cheese and another layer of sauce. Continue to layer the ingredients until the pan is almost full. Top with a layer of tortillas and cover them with cheese and sauce.

•Bake at 350 for about 45 minutes

Depending on how big deep your pan is, sometimes this will make a 9x12 and a 8x8 pan as well. I usually serve this with Mahatma's Yellow Rice. Enjoy!
