Originally from: Military brat (of sorts, Dept of Defense…), but spent high school in Olympia, WA
Favorite thing about FIT4MOM: Meeting a group of moms who understand we’re all just doing the best we can. We have good days, bad days and full on “survival mode” days. There is always someone to encourage you, and remind you that you’re not alone.
When did you join FIT4MOM? March of 2016
What is your current job? Or what did you do before staying at home? I work part time as a hospital Pediatric Nurse. There’s nothing else I’d rather do!
What is your favorite food? I really don’t discriminate…. Thai, bar food, seafood… Chips and Salsa are a big weakness of mine, though.
What is your favorite beverage? Coffee & Wine!
What is your favorite book? I’ve really gotten back into reading the last few years. I love Jodi Picoult and Lisa Scottoline. Murder mysteries are a new fav.
You are given four free hours of babysitting, what would you do? Get drinks with my husband, a massage and a nice dinner at a quiet restaurant.
What is your dream kid free vacation? All inclusive beach, anywhere!
What is your dream family vacation? I’d love to show my girls Europe, and show them where I was born in Germany. And of course, Disney world!
How has becoming a mother changed you? I’m actually more organized (My mom is cringing right now). But I noticed a huge change in my ability to be a good nurse. It’s humbling to now know how trusting parents must be to hand me their baby, big or small.
Fondest childhood memory? All the years my best friend Regan and I spent playing every day before I moved. It’s crazy how quickly life has changed and now it’s our girls who will grow up friends.
Your favorite "go to" family friendly recipe? “Lemon Tree Chicken”
Dredge chicken breast in flour, salt and pepper.
Brown in frying pan in olive oil
Remove when cooked through, and place in baking pan, cover with swiss cheese
Deglaze pan with ½ cup white cooking wine
Add 1 cup heavy whipping cream and juice of 1 lemon
Pour sauce over chicken and broil til cheese is bubbly. Serve with rice. (And we always double/triple the sauce! :) )
